This post contains affiliate links.  This week we were able to try some new meals such as Cheeseburger Hashbrown Cups, which I was too lazy to make into cups, so I made it into a casserole.  The whole family liked it, though it wasn’t quite filling enough for my teens.  We also tried Pizza in a Bowl, which I modified to fit out dietary needs.  (Recipe links below.)  Now, if I can only remember to put these recipes in the cookbook I need to write up.

Meal Prep

All of our bananas seemed to get ripe at once, so I made GF/DF Banana Bread for the kids to eat and a batch of muffins using the same recipe to put in the freezer.

Lunch–Turkey & cheese Sandwiches, chips, veggie
Dinner–Pizza in a Bowl, Sugar Snap Peas

 

Wednesday

Lunch–Taquitos, leftover Mexican rice, cucumbers
Dinner–Turkey & cheese omelettes, waffles, apples & oranges

Thursday

Lunch–Thai Peanut Chicken Satay
Dinner–Cheeseburger Hashbrown Cups, salad

Friday


Lunch–Seafood Nachos, salad
Dinner–Blackened Cod, sweet potatoes, salad
