This post contains affiliate links.  What a difference in our food quality and taste when my husband and I take the time to cook a lot of food on the weekends.  My husband cooks all the meals on the weekend and often doubles recipes.  Then, on Sunday, I cook a few meals in advance.  After all that cooking, our refrigerator often looks like this:

This week, we had so many leftovers that I didn’t have to cook a full meal until Thursday!  This makes my week go so much more smoothly.  Here’s our meal prep and menu plan for March 20 2023:

Lunch–Miso Pork, veggies, tofu
Dinner–Tacos with Lettuce, Tomato, Guacamole

Monday

Lunch–each of us had a different leftover meal,
Dinner–leftover oden

Tuesday

Lunch–Leftover Sausage & Lima Beans with rice,
Dinner–Hamburger Soup, bread with butter

Wednesday

Lunch–each of us had a different leftover meal
Dinner–Pork Bolognese with Kale over bowtie pasta

Thursday

Turkey Cheddar Burgers with French Fries

Lunch–Turkey Cheddar Burgers with Avocado Mayo (using Daiya cheese), tater tots, carrot sticks
Dinner–leftover miso pork, broccoli & baked potatoes

Friday

Lunch–Tuna Melts, carrot sticks, blueberries
Dinner–Fish sticks, rice, green beans
