This post contains affiliate links. I experimented this week with not having a big meal prep. That was not my brightest move. While we didn’t resort to eating out, I served more processed foods during the week than I would have liked. Lesson learned–at this season in my life, meal prep is essential!

Pork Chops (my husband cooked these and made a double batch so we’d have a meal for one of the weeknights)

Saturday
Lunch–Pork Chops, diced potatoes, asparagus
Dinner–Steak, rice, green beans
Sunday
Lunch–Japanese soup with daikon, Chicken, Zucchini, Carrot Stir Fry
Dinner–Ham & Cabbage Stir Fry, rice
Monday
Lunch–Trader Joe’s Beef Mini Tacos, Mexican Street corn
Dinner–Tacos, lettuce, tomato, guacamole (yes, I served my kids tacos for two meals in a row. No one complained!)
Tuesday
Lunch–I can’t remember!
Dinner–Chicken Legs, mashed potatoes, peas
Wednesday
Lunch–Indian food & rice
Dinner–leftover pork chops, tater tots, peas
Thursday
Lunch–Polish sausage, french fries, peas
Dinner–Breakfast sandwiches, cucumber slices, clementine
Friday
Lunch–Spaghetti with mushrooms, cucumber slices
Dinner–Oden, rice, miso soup
