This post contains affiliate links. This summer has been packed with many fun events and a lot of work for me. I find myself longing for the routine of fall, and hopefully fewer activities. As we round the last stretch of summer in what might be our busiest month–August, we’re relying on old favorites for meals. Here’s what we ate this week.
Meal Prep
My husband cooked up some chicken on the grill, so we had extra to eat during the week.
Menu Plan
Saturday
Lunch–Turkey lunchmeat on almond flour tortilla with lettuce, tomato, and avocado, and cucumbers (I am loving this meal and eat if for lunch almost every day. I usually fix something else for the family, though.)
Dinner–Cod, sweet potatoes, broccoli
Sunday
Lunch–Miso pork chops, green beans, sweet potatoes
Dinner–grilled chicken and roasted asparagus & bell peppers
Monday
Lunch–Trader Joe’s tamales, refried beans, cucumber slices
Dinner–Asian noodles, cucumbers with tuna salad
Tuesday
Lunch–Tuna melts, carrots, chips
Dinner–Slow cooker beef stew, bread
Wednesday
Lunch–taco soup (I left out the ranch dressing), cheese and onion quesadillas
Dinner–Roasted Polish sausage, carrots, potatoes, bell peppers
Thursday
Lunch–leftovers
Dinner–Egg Roll in a Bowl,
Friday
Lunch–mini tacos from Trader Joe’s, leftover refried beans, carrot sticks
Dinner–Breakfast for dinner
