This post contains affiliate links. I’m trying to clean some ingredients out of the freezer that we never use like coconut flour. (Cleaning out old ingredients will help me make room for my 80+ freezer meals I’m trying to make before this summer!) One way I’ve been using the coconut flour is by making coconut chocolate chip cookies. The kids (and my husband) aren’t complaining about this!
Here’s my meal prep and menu plan for January 31 2022.
Chocolate Peanut Butter Crunch Balls, (made into bars)
Lunch–Homemade Sushi, Salad
Lunch–Chicken Breast, radishes, diced potatoes, cauliflower
Dinner–Eye of Round Roast, beets, salad
Lunch–Paleo Stuffed Peppers (add rice to them for the family), coleslaw
Lunch–Spaghetti, cucumber slices
Dinner–BBQ Smoked Sausage & Lima Beans with Rice
Lunch–One Skillet Paleo Dinner, baked potato
Dinner–Fish Patties, leftover Spanish rice, leftover cauliflower & cabbage
Lunch–Shredded Chicken Tacos, Salad
Dinner–Pulled Pork Sandwiches, BBQ Chips, salad
