This post contains affiliate links.  I had a busy week this week, so on the weekend I made a smallish meal prep/snack prep.  Would you believe the below pictured snacks lasted my three kids and husband just about three days?  Luckily, Bookworm got a Salbree microwave popcorn popper for Christmas, so he busted that out every night for a family snack supplement.  I guess I need to up my snack prep game next week.

Dinner–Asian Noodles,

Sunday

Lunch–Bok Choy & Meatball Soup
Dinner–Pork & Tofu Asian Cabbage Stir Fry, rice, diced potatoes

Monday

Lunch–Tamales, leftover Spanish Rice, lettuce
Dinner–Monte Cristo Sandwiches (made GF & DF–Cuddle Bug cooked!), chips, salad

Tuesday

Lunch–Vegetarian Chili Mac, carrot sticks
Dinner–Pork & Cabbage Stir Fry, Rice

Wednesday

Lunch–Moroccan Beef & Zucchini, corn dog muffins
Dinner–Slow Cooker Beef Stew, bread with butter

Thursday

Lunch–Chicken nuggets, french fries, salad
Dinner–Tater Tot Casserole, cucumber slices

Friday

Lunch–ham & cheese omelet, waffles, smoothie
Dinner–Vegetarian Chili (from the USA South Eat2Explore Box), cornbread, salad
