Finally I’m getting into the swing of things again. I’ve been struggling a bit with MyWW (Weight Watchers), which I’ll talk about on my goals post on Thursday. However, I did prep some healthy meals and snacks for the week. Here’s out meal prep & menu plan for January 19, 2020.
Meal Prep
Classic Minestrone Soup (without the pasta)
Banana Oatmeal Walnut Muffins, (subbing coconut sugar for the brown sugar)

Many of these meals were on last week’s menu plan. We didn’t get to them because my husband and both girls were sick and eating very little.

Slow Cooker Ham and White Bean Soup, Udi’s dinner rolls

London Broil, Beets, Brussels Sprouts, Diced Potatoes

Zero Point Weight Watchers Taco Soup, (didn’t get to make this last week because 3 of the 5 of us were sick and didn’t feel like regular meals
Wednesday
Slow Cooker Beef Stew (also didn’t get to make this one from last week–leaving out the gravy packet and adding in peas)
Thursday
Honey Balsamic Chicken with Crispy Broccoli and Potatoes,
Friday
Healthy Taco Casserole, salad
