This post contains affiliate links.  I hope you had a wonderful Christmas!  We were hoping my mom could come to visit, but she decided she didn’t want to risk the virus while making a cross country journey.  Hopefully, things will settle down, and we’ll be able to visit her sometime soon.  Were you able to visit with family during the holidays?

Here’s our meal prep and menu plan for December 27 2021:

Meal Prep/Snacks

I found a recipe for gluten free Chex Mix, and the kids loved it!  I plan to make it again, maybe this week.

I also browned down two pounds of ground beef.  I took half a pound and mixed it with corn, black beans, and taco seasoning for the tacos we had on Monday.  The other 1.5 pounds I used during the week for other meals.

Sugar Cookie Bars,

Lunch–Salmon, bok choy, rice, beets

Lunch–Okinamiyaki, Tofu & Veggie Soup
Dinner–Chicken Stir Fry,

Monday

Lunch–Baked Tacos, lettuce, tomato
Dinner–leftovers

Tuesday

Lunch–Skillet Shepherd’s Pie,
Dinner–Polish Sausage, Potato, Carrot & Cauliflower Sheet Pan Bake

Wednesday

Lunch–Beef & Kale Soup, bread with butter
Dinner–Tuscan Sausage & Vegetable Stew,

Thursday

Lunch–Asian Noodles,

Dinner–Tuna melts, chips, carrot slices

Friday

Lunch–leftover Asian Noodle soup, turkey burgers, rice
Dinner–Pulled pork sandwiches, chips, cucumber slices
