This post contains affiliate links.  Lesson learned this week?  Don’t be in a rush when meal prepping for the week.  The chicken patties that I made required setting out the hashbrowns until they were thawed and then squeezing all the water from them.  My hashbrowns were half-thawed.  I did squeeze the water from them, but there was still water since they weren’t completely thawed.  Now my chicken patties taste rather bland because they have residual water in them.  Lesson learned.  Here’s our meal prep and menu plan for April 3 2023:

I also browned a pound of ground beef to put in the freezer and chopped the veggies I’d need for the Slow Cooker Lasagna during the week.

Lunch–Seafood Salad
Dinner–Salmon Patties, Daiya mac & cheese, salad


Lunch–Jumbalaya, corn bread
Dinner–Chuck Roast, diced potatoes, carrots


Gluten Free Dairy Free Cheeseburger Soup

Lunch–Cheeseburger Soup,
Dinner–Turkey & Cheese Sandwiches (I’ll use turkey lunch meat, Daiya cheese, DF butter, and GF buns, plus reduce the amount of butter & cheese and leave out the sugar.), lentil soup


Lunch–I don’t remember!
Dinner–Slow Cooker Lasagna Soup,


Lunch–leftover Cheeseburger Soup,
Dinner–leftover Jumbalaya & corn bread


Lunch–turkey sandwich with lettuce, tomato, avocado, corn chips, cucumber slices
