I haven’t done meal prep and menu plan posts for quite some time because I’ve been flying by the seat of my pants and not meal prepping (or, to be honest, doing much menu planning). However, I’m hoping that will change by mid-May when our schedule shows down quite a bit.

Meal Prep

I didn’t do any meal prep, but my husband made large servings of meals on the weekend, which we were able to eat during the week.

Menu Plan

Saturday
Lunch–Slow Cooker White Chicken Chili, toast
Dinner–Homemade sushi,

Sunday
Lunch–Japanese curry, rice, salad
Dinner–Steak, potatoes, cauliflower, cucumbers

Steak, potatoes, cauliflower, cucumber

Monday
Lunch–tuna melt, cucumber slices, pineapple slices
Dinner–Tostados and salad

Lunch–leftover Japanese curry, rice
Dinner–Chili, Sourdough Discard Cornbread, salad

Friday
Lunch–Tuna melt sandwiches, chips, carrot sticks
Dinner–Slow Cooker Hamburger Stew,
