This post contains affiliate links.  This menu plan is from last week when we went to Michigan for Easter.  We drove home on Easter, hence the Chipotle on Sunday.  I didn’t get to do any meal prepping on Sunday, so we relied on a lot of easy meals and convenience foods.

Lunch–Sloppy Joes (from my freezer cooking session), diced potatoes, cucumber
Dinner–Thai Chicken Curry, rice

Tuesday

Lunch–Trader Joe’s Beef Tamales, refried beans, corn
Dinner–Tacos with lettuce & tomato, chips & guacamole

Wednesday

Lunch–Chicken Quesadillas, Black Bean Soup
Dinner–Turkey sandwiches, french fries, apple slices

Thursday

Lunch–leftovers
Dinner–Pulled pork sandwiches, chips, cucumber slices

Friday

Lunch–chicken nuggets, french fries, peas & corn
Dinner–Slow Cooker Cilantro Lime Chicken (from the freezer), rice
