This post contains affiliate links. I’m slowly working on making life more manageable. (That was a big motivator for ditching my 2023 goals and creating new goals for the rest of the year.) Once I start working on consistently achieving the goals on my list, I’m going to work on making our meals more systematic by going back to meal prep. However, that’s still a few weeks away. Meanwhile, here’s our meal prep (or lack thereof) and menu plan for October 24 2023:
No meal prep this week except the big meals my husband makes on the weekend. There are always enough leftovers for some lunches during the week.
Lunch–Chicken nugget salad
Dinner–rice, Japanese curry with beef stew meat
Lunch–Chipotle (we went apple picking at an orchard 1.25 hours away and picked up lunch on the way home)
Dinner–Chicken, zucchini, pepper stir fry
Lunch–leftover rice and Japanese curry
Dinner–leftover beef roast, baked potatoes, coleslaw
Lunch–Trader Joe’s tamales, refried beans, salad
Dinner–Tostados with the leftover refried beans, beef, and cheese, carrot slices
Dinner–Unstuffed Peppers (the family loved this one)
Lunch–Turkey sandwiches, chips, carrot sticks
Dinner–Creamy Bean Soup with Kielbasa
Lunch–Homemade Pepperoni & Mushroom Pizza, cucumber slices
Dinner–I don’t remember!!
