This post contains affiliate links. The last few weeks, I haven’t been very good at meal prep. I just wanted to take a break, but I had to pay for it. Twice this week, the girls and I went out to lunch because we didn’t have anything ready at home and we were out and about. That’s definitely not what I want to be doing regularly, so this week I had two mini meal prep sessions, one on Friday and one on Sunday. Here’s our meal prep and menu plan for February 24, 2020.
Meal Prep
On Friday I made:
Sloppy Joes and Chalupa Salad (both recipes from MyFreezEasy) and also browned 1/2 pound of ground beef.
I cleared out some of the frozen ground turkey I had in the freezer and made Weight Watchers Meatloaf. I sure hope we like this recipe because I made 3 loaves!
On Sunday I made
Sweet Potato Toast, and Banana Oat Breakfast Cookies, and Taco Rice.
Menu Plan
Here’s what we’re planning to eat this week:
Saturday
Pork Loin Roast, Diced Potatoes, broccoli
Sunday
Lunch–Japanese Noodles,
Dinner–Chicken Tortilla Soup,
Monday
Pulled pork sandwiches, cucumber slices, garlic bacon potato patties (minus the Parmesan)
Tuesday
Weight Watchers Meatloaf., leftover garlic bacon potato patties, broccoli
Wednesday
Gluten Free, Dairy Free Seafood Nachos (I adapt this recipe using GF/DF ingredients), cucumber slices
Thursday
Baked Beef Ziti, broccoli
Friday
Creamy Gluten Free, Dairy Free Tomato Soup, Nut Thins Smokehouse Crackers
