This week is going to be a busy one for everyone, so no meal prep this week.  Instead, I planned some simple meals for the beginning of the week and some yummy meals using leftovers for the end of the week.

My mom flies in to visit today, and we’re so excited to see her!  Since she had a hip replacement in October, we didn’t think she’d be able to come, but she decided she’s feeling well enough to visit.

Loaded Potato Chowder (subbing bacon for panceta, plain almond milk for milk, and no sour cream), salad

Dinner–Leftovers & snack foods
