After a few comfortable weeks being homebodies, we have a busy two weeks coming up. Bookworm has an ice skating party to attend and he’ll be in a spelling bee. We’ll have several days that are busy, busy, busy. This week I’m taking advantage almost exclusively of our freezer meals. (All meals with an * are coming from the freezer.)
Bookworm is finishing up his second quarter, so he’s eligible to take a week long break next week, but he decided to wait to take it until the Olympics are on. We both love watching them, so that should be a fun week.
Here’s our menu plan for the week:
Sunday
Lunch–Chicken tacos and guacamole
Dinner–Pork, green beans and potatoes
Monday—Vegetable Beef Soup*
Tuesday—One Pot Stuffed Pepper Soup*
Wednesday—Meatball Minestrone Soup*
Thursday—Hamburger Soup*
Friday—One Pan Baked Salmon and Vegetables
Saturday–dad’s choice!
