It has been a struggle for me trying to find dairy-free food that also does not contain chicory root or inulin. So, today I decided to have a mini-baking day using all dairy free ingredients. My six year old helped.

We made:
-24 Pineapple-Carrot Muffins (so tasty and moist! Recipe is coming tomorrow)

-30 Peanut Butter cookies

-1 batch of Honey Granola (this was supposed to be bars, but they were still crumbly, so I just decided to turn them into cereal)

Now we are stocked up on goodies and breakfasts for me for the next two weeks or so. My son will also be taking the muffins to school for snack time.
