I used to have a HUGE sweet tooth. I always wondered why I couldn’t control it, but it turns out the yeast overgrowth was largely responsible. I haven’t had sweets in 3 months thanks to the strict anti-yeast diet. I am currently on the Paleo Auto Immune diet as I try to heal the damage caused by the yeast.
I used to be someone who detested coconut, but now, I am beginning to enjoy it. Even better, coconut has healing properties that are good for gut healing, so I use it frequently.
I decided to buy 1-Pint (16-oz) – Coconut Cream Concentrate from Tropical Traditions when they had a sale for a free jar of coconut oil. I looked through their many recipes and found that there were quite a few “healthy” sweets I could make. I had my eye on the Lemon Coconut Candies recipe and kept checking Fed Ex to see when my package would be delivered. Yes, I was just a little excited about my Coconut Cream Concentrate coming.
It arrived yesterday, and this morning I went to the store to buy some organic lemons. Less than an hour later, the girls and I were whipping up these yummy treats.
A note about my candies. They look prettier when they are shaped into nice, round balls, but I was impatient and put them on the cookie sheet to0 early so mine are a bit flat. They may not be the prettiest candies, but they taste good.
Lemon Coconut Cream Candies
1/2 cup coconut cream concentrate (Put in the microwave for about 30 to 60 seconds to melt it into a creamy mass that has the consistency of peanut butter. Watch it carefully because it smooths out quickly.)
1/8 cup honey
1 tsp. lemon zest
juice from one whole lemon
Mix all ingredients together in a bowl.
Line a cookie sheet with wax paper.
Put the batter on the cookie sheet in rounded tablespoons. If it is too runny to do this, you can put it in the refrigerator for a few minutes to firm up and then put on the cookie sheet, or just make them flat like I did. 🙂
Put in the freezer to firm up and also store in the freezer.
I got 18 pieces from this.

This recipe looks so good. I have heard about the wonders of coconut oil for sometime now, but haven’t made the plunge. I think I’m just going to have to and soon.
