I was searching for a way to use up our green peppers when I happened upon this recipe for Inside Out Stuffed Green Peppers. The problem was that I didn’t have canned tomatoes, and we can’t eat Worcestershire sauce because of the gluten.
So, I took some liberties and turned it into an Inside Out Taco Casserole, and the family loved it. Best of all, this recipe is fairly easy on the budget and simple to make. That’s my kind of recipe!
Inside Out Taco Casserole
1 lb. ground beef or turkey
1 cup salsa
2 green peppers, diced
1/2 cup uncooked brown rice
1 cup water
1 TBSP cumin
2 tsp. oregano
2 tsp. garlic powder
1/2 tsp. salt
1/4 tsp. pepper
Brown the beef or turkey in a pan and drain the fat.
Meanwhile, preheat the oven to 350 degrees.
Spray a 2 quart casserole pan with non-stick cooking spray and combine all of the ingredients in the casserole pan.
Cover and cook for one hour.
Serve with chips and guacamole.
