No one is a fan of spicy food in our family except my husband. We planted 4 small hot pepper plants in our garden to use sparingly in homemade salsa, but our Roma tomato plant mostly died, so there was no salsa this year. Instead, there were lots and lots of hot peppers for my husband. Then our CSA sent even more.
We did some quick research and started drying the peppers for use this winter.
How To Dry Hot Peppers
- Cut the peppers into halves or quarters. (The halves will take longer to cook, so my husband sometimes even halves the quarters so they will dry faster.
- Put the cut peppers on a cookie tray, and place in a 200 degree oven.
- Let them cook for 2 to 3 hours, until completely dried out. (I check them frequently and remove the ones that dry faster so they don’t burn.)
- Let them cool, and then pulse in a food processor until they are the size of flakes you enjoy. Store in a cool, dry place in a sealed container.
