Our one little cherry tomato plant has been a prolific producer, already giving us 375 cherry tomatoes.  The plant is still full of green tomatoes, and there are more blossoms.  One of our CSAs is also experiencing cherry tomato overload, so every week for the last few weeks, we have been eating several meals created around cherry tomatoes.

These cherry tomatoes were inspired by Julia Child’s Provencal Tomatoes recipe.  They are delicious and frugal.

My son simply could not get enough of these BLT Cherry Tomato Bites appetizer.  Even though his birthday is in June, he has already requested this as his birthday meal.  I made it again for him before he went away to grandma’s for a week.







The picture simply doesn’t do this meal of Pasta with Roasted Garlic and Cherry Tomatoes justice. Roasting the garlic mellows out the flavor. We added green beans to give it a nice boost and were pleased with the flavor.







Cherry tomatoes make a great addition to a taco salad. Yum!








Once again, the picture doesn’t do it justice (time to buy a new camera when our debt is paid off!), but this Pasta with Garlic and Whole Cherry Tomatoes was delicious. (Recipe coming this afternoon!)







We also like to make a simple pesto by combining one bunch of basil in the food processor with about 1/4 cup oil (depending on the size of the bunch of basil). Cook up the pasta, drain, put back in the pan and mix with the pesto and halved cherry tomatoes. Cook for 3 to 4 minutes, until heated through.
