Last week, fellow blogger Erika from Newlyweds on a Budget mentioned how she likes to make Paleo pancakes.
I set about making the pancakes yesterday, but I misread her directions and at first had a gloppy, greasy mess. After some adjustment, I ended up with these pancakes that my kids wolfed down and my husband declared were the best gluten free baked goods I have made thus far.
Gluten Free, Dairy Free Pancakes
1 cup almond butter
3 eggs
3 mashed bananas
Directions
-Put all ingredients in a bowl and mix with a mixer until smooth.
-Use a spoon to make small 3 inch pancakes on a griddle on medium heat
-These pancakes burn quickly, so keep a close eye on them. By the time I had finished putting the batter on the skillet for all of the pancakes, the first ones were ready to be flipped.
OPTIONAL: We added raisins to some of these and they had a sweeter, fruity flavor. Small diced apple pieces would be a good addition too.
Makes 24 pancakes.

I make paeo pancakes occassionally but you have to eat them in moderation because although they are “healthier” they are high in calories and fat. Bananas have a high caloric count (1 medium banana = 105 calories and you are using three in this recipe. Creamy roasted almond butter is 190 calories in 2 TBSP. On a paleo diet it is easy to gain weight if you are not exercising. This meal alone hits really high for a 2000 cal/day diet. But they are yummy!
1 C almond butter – 1583 calories
3 bananas – 315 calories
3 eggs – 216 calories
Excellent point. When we made these, we made 26. The kids each got two, and then they had eggs and fruit, so it wasn’t their entire breakfast.
