100_4331Once upon a time before food intolerances, I would spend one weekend a month cooking a large batch of food and freezing it for my family to eat during the month.  That habit fell by the wayside, and it’s been a long time since I’ve had a freezer cooking session.

However, thanks to a rapidly rising grocery bill and a time crunch as my freelance writing picks up, I decided to have a freezer cooking session again.

Can I just tell you, having a freezer cooking session when your youngest is nearly 3 years old is much easier than having a freezer cooking session with a little one.  I can’t believe how much more I was able to get done, and rather than occupying the kids, my husband was able to do the dishes.  Yeah!

I miss having babies, but there is something to be said for children becoming more independent.

Here is what I made and the quantity:

Quinoa Chili – 3 meals  (I’ll add the quinoa when I reheat this so the quinoa doesn’t get gummy in the freezer.)

Southwestern Soup – 1 meal (I made two, but we already ate the other one!)

Lighter Meatloaf – 3 meals

Beef Taquitos – 3 meals (I opted not to put these in the corn tortillas.  I just made the filling and will wrap and fry them when we eat them.)

Crockpot Fat Free Refried Beans for the Freezer – 3 side dishes  (Again, my husband thought this tasted funny, but the kids liked it.  Next time I think I’ll try refried beans with a ham hock or bacon for extra flavor.)

GF DF Pancake Muffins – 4 breakfasts or sides to soup meals (My husband thought these tasted funny, but 2 of my 3 kids liked them.)

Beef N Tater Bites – 4 meals

Sweet and Sour Meatballs – 3 meals

Black Bean Vegetarian Taco Filling (Didn’t get to make this one.)

Paleo Pancakes – 4 meals

Homemade Sausage – 3 breakfast meals

Taco Soup – 1 meal (Again, we ate the other meal already.)

Homemade Grape Nuts Cereal – 2 meals  (This and the baked oatmeal were big hits, so we’ll be making them again.)

Baked Oatmeal – 2 meals

All told, we ended up with 18 main meals, 3 sides of refried beans, and 12 breakfast meals.

Although we spent a lot on groceries upfront this month, I’m confident this freezer cooking session will help reduce our overall grocery cost.  I’m planning to do another freezer cooking session next month, too.  This might be a new habit again.
