October freezer cooking session–20 meals!

I had a freezer cooking session this weekend for the first time in almost a year.

I forgot what a pain it can be to cook for three hours.  In fact, I stopped after three hours on Saturday and then did another 1.5 hour bout Monday night.  However, I know I will be SO glad to have the freezer stocked.  Now that the kids are involved in all of their extracurricular activities, we usually have at least two nights a week where getting dinner on the table is difficult because we’re gone into the late afternoon.

Now, on those busy days, I’ll just pull out a freezer meal!  I don’t plan to just eat these meals for two weeks.  Instead, they’ll give me a break on busy days/weeks.  I’ll still be cooking dinner four to five nights a week.

Here’s my original freezer cooking plan.

Of course, it didn’t go quite as planned.  I ended up making some meals that weren’t on the plan, and ditched some of the meals I had planned to make.  That’s just the way it goes sometimes.

Here’s what we ended up with:

Pasta Fagioli Soup x3

Hamburger Soup x2

Ground Beef Goulash x2

Italian Wedding Soup

Beef & Bean Chili x2

Meatloaf x5 (I altered this recipe to make it healthier)

Crockpot Sloppy Joes for a Crowd (makes 3 meals, and I changed some of the ingredients to make it healthier)

3 lbs. browned hamburger, divided into 1/2 pound packages for spaghetti sauce,

3 lbs. browned turkey burger,

1 lb. cooked lamb patties (not pictured)

1 lb. cooked beef patties (not pictured)

Obviously, for some of these meals I’ll need to still make vegetable sides, but having the main meal, or in some cases, the entire meal, will save me a lot of time. . .and money!
