I had a mini freezer cooking bout this weekend. It was definitely not as large as a normal freezer cooking weekend, but considering my son was sick and all three kids were up for various reasons at 1:30 a.m. the night before, I am quite happy with what I accomplished.
Here is what I ended up with:
Homemade Fries x4 (just realized I didn’t include these in the picture)
Homemade Hashbrowns x4
Honey Mustard Chicken x2
Bean & Chicken Tacos x1 (plus 6 individual portions for my lunches)
Chicken & Rice Burritos x2 (plus 6 individual portions for my lunches)
I am happiest about the single size portions for my lunch because lately we have been finishing our entire dinner with no leftovers. There is only so much peanut butter and jelly I can eat! 🙂
