While it seemed to take all of my day, there were plenty of breaks during my freezer cooking Saturday and Sunday to accommodate kids.  I actually only cooked about 4 hours, including clean up and ended up with the following for the freezer:

Turkey Croquettes – At least 6 meals

Meatballs – 7 Meals

Pumpkin Muffins – 48

Sweet Potato Waffles & Pancakes – 28

Orange Puree – 3 ice cube trays full

Homemade Fries – enough for 6 meals’ side dish

Ham & Egg Breakfast Burritos – 16 servings

It is nice to have my freezer stocked with some homemade “convenience” foods again.  If there is one thing this pantry challenge has taught me, it is that I do not like cooking dinner every night! 🙂  I would much rather do once a month cooking and enjoy the benefits all month long.
