We finished all the freezer meals I made in September, so I took some time in the beginning of January to restock the freezer. I ended up with 26 meals, and I still have quite a few baked goods from my mini freezer cooking session in December.

Vegetarian Split Pea Soup (x3) I just doubled the recipe, but this made so much I was able to divide it into 3 meals. We’ll likely be saving these until Lent in February when we cannot eat meat on Fridays.
Slow Cooker Ham & White Bean Soup (x2)
Split Pea Soup (x1) I actually made two of these, but we ate one for dinner the night I made it.
Sloppy Joes (x2)
Paleo Minestrone Soup (x3) I divided this into 2 main meals for the family and then 6 single size servings for my lunches.

Meals I Didn’t Get to Make
Because I had a very ambitious freezer cooking plan, I couldn’t make everything. If I have the ingredients throughout the month, I’ll make some more of these and put them in the freezer. If not, I’ll just add them to the freezer cooking session for next month or March.

Spaghetti Bolognese (x4) I wanted to make this, but one of our large burners on our stove is not working, and I didn’t have the time to make two batches, each doubled, because each batch takes 3 hours!

All told, I made 26 meals, plus, I had 8 additional meals in the freezer that I had made earlier in December. That means we have 34 meals in the freezer, which is more than enough for January and will take us into February.
