In preparation for my upcoming foot surgery, I’m making a lot of freezer meals. I still have about 16 meals in the freezer from my January freezer cooking session, thankfully. I’ll need to have enough food for lunches and dinners for about a month, which is why I still have to make more.
I don’t have time this round to have a big freezer cooking day. Instead, I’ll make these meals as our regular meals, but as I’m cooking, I’ll triple or quadruple the recipe so I have two or three extra to put in the freezer.
Here is what I’m hoping to make before I have surgery later this month.
All recipes are gluten and dairy free.

Dinners
Goulash x2
Slow Cooker Meatball Veggie Soup x2
Sausage Spinach Tomato Soup x2
Taco Rice x2 (I’ll freeze everything except the rice)
Sloppy Joe Sandwiches x2 (from MyFreezEasy)
Snacks
