Happy New Year!
Since we ate from the freezer for about two weeks before we moved and the week after we moved, most of our freezer meals are gone. Since my husband was home on vacation last week and part of this week and can watch the kids, I am going to have a large freezer cooking day and make many of our meals for January. Here is the plan:

I think I may try a lot of these right along with you! 1 question though- do you cook your meatloaf prior to freezing or just simply assemble it? Your menu looks great- can’t wait to try the sweet potato waffles!
I cook the meatloaf before freezing it and then, the night before I serve it I let it unthaw in the refrigerator. The next day I simply microwave it to warm it up. It makes for a quick meal, and because the meatloaf is so moist, it doesn’t get dried out this way. Almost all of the recipes we have made before and are our favorites. Let me know which ones you like!

I’m going to try the meatball recipe. I love freeze-ahead meals. I made two pans of manicotti last night and will freeze one of those and have chili in the freezer already!

Freezer cooking is on my list for next week. I’m going to try some of your recipes too, and I can’t wait!
My 2nd child is due at the end of this month and I think I’ll take a couples days here very soon to make a few of these recipes – esp the sloppy joes, meatloaf & meatballs! They’ll be easy but meaty meals for the family that the hubby will like and can heat up himself!
