Yesterday was a blustery, cold, rainy day, so the girls and I stayed in and had a mini freezer cooking session. I had fun with my helpers, though I had to watch out for my 18 month old who wanted to stick her hands in the batter.
We ended up with two loaves of pumpkin bread (I’ll share the recipe next Monday), and about 30 sweet potato waffles. We were getting a bit bored with our oatmeal breakfasts, so this will give us some variation. (One of the loaves of bread is missing from the pic because we already ate half of it 🙂 The other half is in the refrigerator as are 6 sweet potato waffles for breakfast this morning.)

Those sweet potato waffles sound so yummy! I’d love the recipe. Also, how do you re-heat your waffles? I find that they get mushy in the microwave and really dry in the oven. What works best for you?
