One of our favorite meals is Barbecued Smoked Sausage & Lima Beans. We found this recipe in Light & Tasty (now Healthy Cooking) Magazine. If you can find all of the ingredients on sale, this makes for a tasty dish. It is one of our go to pantry dishes.

We have tinkered with the ingredients a bit to suit our tastes.

1 c. chopped onion (.35)
1 c. chopped green pepper (.50)
2 garlic cloves minced (.10)
2 tsp. olive oil (.05)
16 oz. polish sausage, quartered and diced (1.33 –we found polish sausage on sale 3 lbs./ 3.99!)
1-28 oz. can diced tomatoes (1.25)
¼ c. brown sugar (.20)
¼ cup cider vinegar (.05)
1-1/2 tsp. mustard (.03)
1 tsp. chili powder (.02)
½ tsp. ginger (.05)
¼ tsp. pepper
16 oz. bag frozen lima beans (1.00 on sale!)
Hot, cooked brown rice (.60)

In a large nonstick skillet, sauté the onion, green pepper and garlic in oil for 1 minute. Add sausage; cook and stir 5 minutes longer or until sausage is lightly browned. Stir in the tomatoes, brown sugar, vinegar, mustard, chili powder, ginger, sale and pepper. Bring to a boil. Stir in lima beans. Return to a boil. Reduce heat; cover and simmer for 10 minutes or until heated through. Serve over rice.

Makes 6–1-1/3 c. servings.

Total cost = 5.53 or .92 per serving ($3.68 to serve 4)

We all had substantial servings last night before I remembered to take a picuture of this dish. What is in the pan is leftover from our meal, (enough for another meal!) so the serving size in generous.
