One Pan Polish Sausage Potato, Carrot, Pepper MealWe’ve been so busy lately.  We still want to eat good food, but I want it to be fast!

And lately, one of the fastest dishes I’ve been making is this yummy one pan oven baked Polish Sausage, Potatoes, Peppers, and Carrots.

It doesn’t have a fancy name or fancy ingredients, but it is good and fairly healthy, too!

Ingredients

16 oz. polish sausage, diced
5 to 6 russet potatoes, peeled and diced
4 to 6 carrots, peeled and diced
2 peppers (green or colored), diced
onion flakes
salt and pepper
olive oil to coate

Directions

*Spray a cookie sheet with non-stick spray.

*Preheat the oven to 425 degrees.

*Cut all of the ingredients, place on the cookie sheet, and then sprinkle to taste with onion flakes and salt and pepper.

*Coat everything with olive oil.  (I just dumped, but I’d guess you’d need about 1/4 to 1/3 cup.)

*Using your hands, mix all of the ingredients together and toss to coat with olive oil.

*Bake for 15 minutes.  Remove from oven and using a spatula, flip the potatoes and other items over.

*Bake for an additional 15 to 20 minutes, until the potatoes are turning brown on the outside and soft in the center.

Serves 4 to 6.
