Well, I made a list of recipes for freezer cooking. Somehow it turned into a long list, and I am a bit intimidated. However, it is important I get quite a bit done because during the holidays I will be visiting and staying with relatives who do not make many dairy free recipes, so I will be bringing my own food. Here is the plan. Hopefully I will accomplish it all.
Breakfasts/Snacks:
Banana Bread
Nutty Yam Banana Bread
Mini Muffin Rancheros
Peanut Energy Bars
Main Meals:
Bourbon Chicken
Just Like Thanksgiving Chicken
Dump Coke/BBQ Chicken
Ground Turkey Sloppy Joes
Southwest Stew
Tuscan Bean Soup
Sides:
Baked Beans
Macaroni & Cheese
Homemade French Fries
Desserts:
Frozen Fruit Cups
Dairy Free Peanut Butter Fudge
The majority of my recipes without links come from Holly Clegg’s Trim & Terrific Freezer Friendly Meals. I will share some of the ones we especially liked.
As I have with the last few cooking bouts, I will be writing my progress on Facebook as the days go on. I don’t have a detailed plan this weekend, but I do expect to be doing freezer cooking Friday through Sunday. We have several things we have to do this weekend, so it might get a little crazy.
Are you freezer cooking this weekend? If so, please share your plan with us in the comments.

Does the Mac and Cheese do ok in the freezer? We were doing the OAMC while I was working but I’ve slacked off…that’s another resolution for 2011! Totally helps us with the food budget!
Yeah, the mac & cheese does do okay. I was skeptical the first time we tried it, but it still tasted good. Try to undercook the noodles a little though. I’ll try to share the recipe here in the next few weeks.
I just came up with my December Freezer cooking plan!

I added a link for your blog too!
Thanks! I would love it if you come back and comment on your results after this weekend!
