I love mashed potatoes.  I think that is about all I ate my first three months I was pregnant with my son because it was the only thing that soothed my stomach.  Giving up mashed potatoes when I developed a dairy intolerance was a sad event.  However, I have found a simple, perhaps tastier way to make mashed potatoes without dairy.  All that is required are potatoes and chicken broth.

Dairy Free Mashed Potatoes

-Cut the desired number of potatoes in cubes and place in a pan.

-Pour chicken broth over top just until potatoes are covered.

-Cook 20 to 30 minutes until potatoes are fork-tender.

-Pour 1/2 cup to 1 cup of chicken broth into a separate container and reserve.

-Use a potato masher and mash right in the pan.  If potatoes are too dry, gradually add the reserved chicken broth until creamy.  Enjoy!

So simple, and yet so tasty!
