My sweet husband has been trying to perfect a dairy free pancake recipe for me.  He finally has it, and it is delicious!

Dairy Free Blueberry Pancakes
2 cups flour
3/4 tsp. baking soda
3/4 tsp. baking powder
2 eggs
1-1/4 cups apple juice
3/4 cup frozen blueberries, mostly thawed

Mix dry ingredients together in a bowl, then whisk in eggs and apple juice.  Fold in blueberries.  (Make sure they are not all the way thawed or they will be mushy.)

Bake on an electric griddle at 350 until bubbling and edges brown, flip and cook until brown on the other side.  Enjoy!
