I had four sweet potatoes to use up, so I searched the web and found this yummy recipe on food.com. I modified it to fit our family’s tastes. This is one delicious soup!!
Dairy Free Creamy Sweet Potato Soup
2 tbsp. vegetable oil
1 cup onions, chopped
1 cup carrots, chopped
4 cups sweet potatoes, chopped (I used 4 average size sweet potatoes)
1 tsp. ginger, chopped
1 tsp. ground cumin
1 tsp. coriander seeds
4 cups chicken stock
1/2 cup almond milk
fresh ground pepper
-Heat oil in a pot over medium-high heat. Add onions and saute for 2 minutes or until beginning to soften. Add carrots and sweet potatoes and saute for 5 minutes more. Add ginger, cumin, and coriander and saute for 1 minute or until fragrant.
-Add chicken stock and bring to a boil. Cover, turn heat to low and simmer for 18-20 mintes or until vegetables are very soft.
-Puree in a food processor until smooth.
-Return to pan and stir in almond milk. Cook over low until heated through. Season with salt and pepper to taste.
Serves 4 to 6.
