I made this salad that I found on food.com the other day when the temperature was in the 90s and it was humid. This salad was so cool and refreshing and delicious! You must try it.
Chicken Lime Chopped Salad
2 cups Romaine lettuce, chopped
2 medium tomatoes, chopped
1 ripe avocado, chopped
2 stalks celery, chopped
2 radishes, chopped
1 medium cucumber, chopped
Lime Vinaigrette
2 tbsp. lime juice
1 tbsp. olive oil
1 garlic clove
salt and pepper
1 c. leftover chopped chicken (I used some from a salt free rotisserie chicken)
-Combine all veggies in a salad bowl.
-Blend Lime Vinaigrette ingredients together and toss it with the chicken. Allow it to rest about 10 minutes.
-Toss chicken mixture with vegetables and serve. Enjoy!

Well, it’s in the 90’s and humid here today, supposed to be mid-90’s and more humid tomorrow…and this just looks like it would be a refreshing meal based on the picture and ingredients. Healthy too, from what I can see. Throw on some black beans and a few chips, and you have a southwest salad! Maybe a bit less healthy once you add the chips:)
