Our little tomato plant is about the only prolific producer this season.  Add in tomato deliveries from our CSAs and kind neighbors, and, well, we have been experimenting with a lot of tomato recipes.  One recipe that my son absolutely loved was for BLT Bites, which I based on this recipe I found on food.com.

BLT Stuffed Cherry Tomato Bites

20 to 30 cherry tomatoes

4 oz. bacon, cooked and crumbled

1/4 cup canola oil mayo

-Cut cherry tomatoes in half and gently scoop out the seeds.  Put them open side down on a paper towel.  (Reserve the tomato halves that break apart to dice finely and add to the stuffing.)

-Finely crumble bacon and put in a bowl with the mayo and finely diced tomatoes.

-Stuff the tomato halves with the bacon/mayo/tomato mix.

-Refrigerator until ready to serve.

-If you would like, top with finely chopped fresh parsley.
