I experimented in the kitchen the other day, and we loved the results! Best of all, it was so simple to make. Here is what you need for the recipe:

1 large chicken breast, diced in bite size pieces (ours was leftover from barbecuing on Sunday)
1-16 oz. package frozen cheese tortellini
1/2 – 16 oz. bag mixed frozen veggies (we used corn, pea, lima bean & green bean medley)
4 strips bacon, cooked & crumbled
shredded Parmesan cheese
A good BBQ sauce (we used an apple flavored one)

Cook the tortellini in boiling water for 9 minutes. After 3 minutes of cooking, add the frozen veggies to the boiling water with the tortellini. Drain after the 9 minutes has passed. Return to pan and add the crumbled bacon and chicken. Cook on low heat and add BBQ sauce to coat or to taste. Serve with parmesan cheese sprinkled on top.
