It has been so cool around here that I decided it was time to bake up some banana muffins.  I found this great recipe at Food.com, and they were delicious; they almost tasted like a cupcake.  (If I could have dairy, they would be perfect with cream cheese frosting!).  Yum!

Banana Muffins – Vegan

4 ripe bananas
1/2 cup brown sugar
1/2 cup vegetable oil
1 tsp. cinnamon
3/4 tsp. salt
1 cup whole wheat flour
1.5 cups white flour
1 tsp. baking powder
1 tsp. baking soda

-Preheat oven to 350 degrees and spray a muffin tin with non-stick cooking spray.

-Mash bananas in a bowl.

-Add oil, sugar, salt and cinnamon

-Add flours, baking soda and baking powder and mix.

-Spoon into muffin tins and bake for 20 to 25 minutes until muffins are done and slightly browned on top.
