My kids are fairly good vegetable eaters, but any time I can get them to eat more, I am happy to do so.  We recently made these yummy decadent burgers that secretly were packed with veggies, and the kids were none the wiser.  Plus, the extra veggies added moisture to the turkey burgers, which are often dry.

Bacon Wrapped Turkey Burgers with Veggies

1.5 lbs. turkey burger
3 slices bacon
2 carrots, peeled and chopped into small slices
1/4 cup mushrooms
2 green onions, chopped
1 tbsp. garlic
1 egg
1 tbsp. olive oil

-In a skillet on medium, sautee carrots, mushrooms, green onions and garlic in olive oil for 6 to 8 minutes, until veggies are tender.  Let them cool 15 minutes

-Put the veggies in a blender with the egg and blend until everything is liquid.

-Dump the liquid veggie mixture into the turkey burger in a large bowl.  Mix by hand

-Form the meat into 6 round patties, and top each with 1/2 slice uncooked bacon.  Wrap the bacon around to the bottom of the burger and pat it gently in.

-Grill until cooked through. 

We had a rainy day, so we cooked these on our George Forman grill.  I imagine they will taste even better on an outdoor grill.  We also served them wrapped in lettuce, but you could certainly serve them on a bun.
