This week was the start of our chaotic, busy weekdays because all of our homeschool activities are back in full swing.  To help me manage, I had a huge freezer cooking session over Labor Day weekend.

Also, at Costco, I got 100 gluten free corn tortillas for $3.19 that have a best buy date of 9/15, so we’re finding new recipes to use these up.

Lunch–grilled cheese sandwiches, leftover mac & cheese, carrot sticks
Dinner–steak, asparagus, sweet potato, cucumbers


Lunch–Taco Rice, tomatoes, carrots, hummus
Dinner–Pork chops, grilled zucchini, broccoli, tomatoes


Lunch–Refried Bean Enchiladas with homemade Enchilada Sauce
Dinner–Grilled beef tongue, asparagus, zucchini, sweet potatoes

Dinner–Old Fashioned Vegetable Beef Soup


Lunch–Ham sandwiches, chips, cucumber slices
Dinner–Spaghetti Bolognese, GF garlic bread (from the freezer)

Dinner–Mexican Lasagna (Slow Cooker)
