This week, we made some new dishes including one I found on YouTube for Oxtail Soup.  We’re on a mission to use up all the meat–including oxtail and the bit of remaining organ meat that we have–before we get our 1/4 side of beef in late October.  Some kids liked the Oxtail Soup while others thought it was too greasy.

Lunch–Daiya pizza
Dinner–The Ultimate Oxtail Stew , salad, leftover Spanish rice

Monday

Lunch–leftover Beef Pot Pie & pizza with broccoli
Dinner–Best Slow Cooker Chicken Tortilla Soup 

Tuesday

Lunch–pizza, broccoli
Dinner–Trader Joe’s chicken tacos, leftover Spanish rice, leftover chicken tortilla soup

Wednesday

Lunch–Cabbage Beef Casserole
Dinner–Chulpa Salad (from MyFreezEasy)

Thursday

Lunch–Daiya mac & cheese, chicken patties (We NEVER have a meal without a veggie, but it was the end of the month so groceries were sparce, and we got home late after a doctor’s appointment, so no veggie with this meal.  Just keepin’ it real.)
Dinner–BLTs, corn chips, broccoli

Friday

Lunch–Sloppy joes, diced potatoes, peas
Dinner–Goulash, cucumbers, salad
