We usually try to cook our big meats on the weekend, first so my husband can cook them ;), and, second, because we have more time.  However, on Saturday we misjudged, and our meat wasn’t thawed to make dinner.  Oops.  Luckily we had a Trader Joe’s frozen meal in the freezer.

Dinner–Trader Joe’s frozen chicken tacos with peach salsa, salad


Lunch–Open face tuna sandwiches, GF pretzels, melon
Dinner–Brisket, broccoli


Lunch–Grilled cheese, leftover hamburger soup

Dinner–Ground Beef & Cabbage Skillet (with skillet potatoes on the side for the rest of the family)


Lunch–leftover tuna for tuna sandwiches, carrot sticks, tortilla chips
Dinner–Salmon Patties (from the freezer), rice, veggie


Lunch–Spanish Rice Skillet (from MyFreezEasy)

Dinner–Best Slow Cooker Chicken Tortilla Soup Recipe–(x2–one for the freezer)


Dinner–Refried Bean and Cheese Enchiladas using Homemade Enchilada Sauce


Lunch–Chicken patties, broccoli, diced potatoes
Dinner–Chicken Apple Sausage, Kale and Rice Soup (subbed out kale for spinach)
