1 c. pumpkin
1 c. sugar
2 eggs
¼ c. oil
1.5 c. white flour
1 c. whole wheat flour
1 tsp. baking soda
½ tsp. salt
1 tbsp. pumpkin pie spice
1.5 c. chopped apple
-Mix together pumpkin, sugar, eggs and oil
-Add flours, soda, salt and pumpkin pie spice
-Mix until blended
-Add apples
-Spoon into muffin tins
-Bake at 350 degrees for 15-20 minutes
My batter was very thick, which is why the muffins look a little strange in the picture. I was able to make 20 muffins with this recipe.
