Back in the day, I ate too many McDonald’s Egg McMuffin sandwiches. Now, thanks to a leaner budget and a dairy intolerance, my McDonald breakfast sandwich days are over.
I got the idea for this breakfast sandwich from my Weight Watchers leader. (You can read about my weight loss journey over at my other blog, Reformed Chocoholic.) This sandwich is so quick to make, it is faster than going through the drive thru (and so much healthier!).
Simple Breakfast Sandwich
-one whole wheat English muffin
-three pieces of Canadian bacon
-one egg
-Put the Canadian bacon in a skillet and cook on medium for 3 to 4 minutes to warm through
-Take a coffee mug and spray it with non-stick cooking spray.
-Crack the egg into the coffee mug and scramble with a fork.
-Cover the top of the mug with a wet paper towel and place the mug in the microwave; cook for 40 to 60 seconds, until cooked through.
-Toast the English muffin.
-When all the ingredients are done, place the Canadian bacon and egg on top of one side of the English muffin and top with the other side.
(You can optionally add cheese if you would like, but I like it just fine without.)
This takes less than 5 minutes and makes for a tasty breakfast.

I do something very similar for breakfast almost every morning. I still cook my egg in a skillet and use homemade english muffins. I’m hoping to try out a whole wheat version sometime soon. They’re delish! I may try out your tip for cooking the egg in the microwave soon, I won’t even need to turn on the stove!

It works out to 5 pointsplus–1 for the Canadian bacon, 2 for the egg and 2 for the English muffin. (This may vary depending on the brand of English muffin)
I’ve been trying to master these at home for years but never came close. I was a little skeptical of the microwaved eggs but they were fluffy and tasty. Thanks soo much for this one! I’ll be saving money and time going through the drive-through now that i can make these at home
