I hope you had a nice Thanksgiving! My husband bought a 20 pound turkey for the five of us, so now we have two gallon size bags of leftover turkey in the freezer. We’ll be having turkey leftovers all winter long!
Also, I wrote in one of our posts how our stove has only two burners that work now, and they go from barely cooking to blazing hot in no time and are extremely difficult to regulate. Well, we’ve been saving for a few months to pay cash for a new stove, and it comes today. I’m so excited! It’s not fancy (maybe next time), but it’s new, so hopefully it will cook more evenly.
Meals I Made Ahead
Here are the meals and snacks I made ahead this weekend:
Baked Egg, Ham, and Diced Potatoes
Apple Cinnamon Baked Oatmeal (I made a lot of alterations to this to make it 0 points on the WW purple plan. I’ll share the recipe if the changed version is a hit for the family.)
Carob, Banana Oatmeal Muffins (Love these, and they’re only 1 point on the purple plan.)

Thanksgiving Leftovers – Turkey Croquettes, rice, broccoli
Sunday
Eye of Round, mashed potatoes, leftover Thanksgiving gravy, and corn
Monday
Stuffing with turkey inside and the last of the leftover gravy, beans
Tuesday
Wednesday
Taco Soup (Replacing the corn with peppers. As much as this is on the menu, I haven’t gotten to actually make it yet. This is the week!)

Friday
Leftovers. Yum!
