Meals & Snacks I Made Ahead: Meal Prep, September 29, 2019

Thanks to my big freezer cooking session a few weeks ago, I don’t have to make as many meals on the weekend.  Instead, next month, the girls and I will be heading to Michigan for my mom’s hip replacement surgery, so now I’m focused on preparing food I can bring with us.  Since none of us can eat gluten or dairy, it’s always best to prepare food ahead of time for quick meals on the road.

Meals & Snacks for Travel

Best Ever Easy Baked Meatballs (I just used this as inspiration.  The meatballs I made only had ground beef, egg, minced onions, garlic powder and Italian seasoning)

Date and Nut Balls (This is so easy!  In a food processor, just mix together 3/4 cup walnuts and 8 to 9 dates.  These make a fairly healthy, filling road trip snack.)

Quiche in a Cup (Recipe coming soon!  We’ll be eating these for breakfast when we’re driving on the trip.)
