Menu Planning for August 19, 2018

Last week, PB & J Girl suddenly dropped with a cold (my kids don’t just get colds–they vomit and can’t eat for a day or two), so we changed the menu plan a bit.  As a result, I didn’t make all of my meals, so they’re appearing again this week.

Plus, I’m trying to set aside money so we can buy 1/4 side of beef again.  I’ve already reduced our grocery budget from $700 to $750 to $600, so squeezing out the money for the beef will be tough, but I want to try because we really, really miss having a freezer full of beef, and my husband loved using the organ meat for his lunches.

So, this week’s meal plan features meals I can mostly make from the pantry.

Here’s the plan for this week:


Lunch: Meatball Subs, veggies

Dinner: Iranian Kebab



Lunch: Easiest Burrito Bowl

Dinner: Enchilada Lasagna


Tuna Noodle Casserole, carrot sticks (didn’t get to make this last week)


Bacon and Egg Casserole, fruit


Paleo/Whole 30 Beef Stew, salad


Cuban Beans & Rice
