Freezer Cooking June 2018

My mom is still in town, so I took advantage of that to have a freezer cooking session.  I want to stock the freezer because if we do begin ABA therapy, the office is 40 minutes from us, so I know we will be in the car A LOT, and it feels like we’re already in the car quite a bit.  (I’m sure most moms can relate to this!)  Having meals in the freezer will be helpful.

I spread this freezer cooking session over two days.

Day One

I had a light day on Friday and spent one hour in the kitchen making

-a double batch of Taco Rice (we ate one for lunch and then just froze the prepared meat for another–I’ll add rice when we eat it)

Easy Healthy Homemade Granola (I made one batch to try it out, and we liked it; we have since made many, many batches!)

Banana Oatmeal Jam Muffins (I only made a dozen because I ran out of bananas, so I couldn’t make more than that!)

-Chalupa Salad (2 meals of this.  We serve it over nachos or over salad.  From MyFreezeasy.)

Day Two

We all liked the Easy Healthy Homemade Granola so much I started off the day making a double batch of it.

Then, I made Slow Cooker Beef and Veggie Soup, Taco Soup and Sloppy Joes (from MyFreezeasy)

I also made Double Layer Chicken Parmesan Bake just to try it out that night for dinner.  It was a hit with the kids!

Then I made Meatballs for meatball subs (another favorite of the kids) and Quinoa Pizza Bites as a snack for Bookworm.

Overall, it was a productive start to filling the freezer.  I’m hoping to do one more big freezer cooking session at the end of June or in early July before my mom goes back home.
