What We Ate, February 10 – 16, 2018

This week I felt like I was always running behind.  I made a menu plan, but I kind of forgot that we couldn’t eat meat on Wednesday or Friday this week, so that threw a wrench in things.  Also, I’m still adjusting to being on a soft food diet, so I needed to make some additional meals for myself.  Still, we had very little food waste, thankfully, and we all ate some good meals.

Here’s what we had:

Saturday

Lunch:  Cod with Celery and Carrots, sweet potatoes, asparagus

Dinner:  Leftover Cornbread Taco Bake (from MyFreezEasy), salad

Sunday

Lunch–dinner out for my husband and Bookworm, leftovers for us
Dinner–Iranian Kebab

Monday

Lunch–chicken, chips, leftover veggies
Dinner–Cheeseburger Casserole, cucumber slices

Tuesday

Lunch–don’t remember!!
Dinner–Cabbage, Beef, Rice Bake

Wednesday

Lunch–fish sticks, chips, peas
Dinner–grilled cheese, homemade tomato soup

Thursday

Lunch–don’t remember
Dinner–Spaghetti and meatballs from the crockpot (didn’t use bread crumbs or the diced tomatoes or tomato sauce)

Friday

Lunch–Fish sticks, baked potato, corn
Dinner–Tuna noodle casserole, salad
